Happy National Donut Day!

Nothing goes together quite like that first cup of coffee and a donut in the morning. But as much as we love them, these high-fat, high-sugar, and calorie-loaded bits of heaven make them an extremely unhealthy snack (sorry to be a bit of a buzzkill). We know how hard you’ve been working on that summer body and that means you deserve to have your donut and eat it too.  So, we’ve rounded up our favorite delicious and healthy National Donut Day recipes that won’t derail your healthy lifestyle!

National Donut Day Recipes

Lemon Meringue Donuts

Serves: Makes 6 servings

Prep Time: 15 minutes

Ingredients:

Dry Ingredients:

Wet Ingredients:

Instructions:

  • Preheat the oven to 375 degrees F
  • In a small cup, combine almond milk + vinegar then set aside.
  • Mix dry ingredients in large bowl
  • In small bowl, combine all of the wet ingredients (including the almond milk mixture and pureed lemon) until there are no clumps.
  • Fold your wet into your dry, and stir (Do not over-mix! It should be thick but not overly so.)
  • Portion into 6 well-sprayed doughnut wells
  • Bake for 15 minutes or until tops are lightly golden brown.

Earl Grey Donuts with Blueberry Glaze

Serves: Makes 6 servings

Prep Time: 30 minutes

Ingredients:

Instructions: 

For Donuts:

  • Preheat oven to 350 degrees F.
  • Heat almond milk until scalding, not boiling.
  • Remove from heat and steep tea bags in milk for 10 minutes.
  • Discard tea bags and allow to cool to lukewarm.
  • Coat donut pan with cooking spray.
  • Combine dry ingredients (except for powdered sugar) in bowl
  • In separate bowl, combine all wet ingredients (except for blueberries).
  • Combine both bowls, then mix thoroughly into uniform texture.
  • Bake for 20-25 minutes and cool.

For Glaze

  • Place blueberries and powdered sugar in a food processor
  • Pulse until smooth.
  • Top cooled donuts with blueberry glaze.

Vanilla Matcha Donuts

Serves: Makes 6 servings

Prep Time: 35 minutes

Ingredients:

Instructions:

  • Preheat oven to 350 degrees F.
  • Spray donut pan with cooking spray and set aside.
  • Place all ingredients into a food processor and blend until smooth.
  • Evenly distribute donut batter between 6 donut wells.
  • Bake for 30 minutes.
  • Remove from oven and let cool removing donuts from pan.

Serves: Makes 12-14 servings

Ingredients:

Instructions:

  • Preheat oven to 350 degrees F
  • Lightly spray the donut pans with cooking spray.
  • Squeeze the zucchini shreds between a paper towel to remove excess moisture.
  • In a medium bowl, combine flour, cocoa powder, baking powder, salt, and baking soda.
  • In a larger bowl, lightly beat the eggs, and then add the coconut sugar, brown sugar, Greek yogurt, applesauce, vanilla extract, and zucchini.
  • Mix the dry ingredients into the wet ingredient, and stir until well combined.
  • Spoon the batter into the donut pan, and top each donut with 8-10 chocolate chips.
  • Bake for approximately 9-11 minutes until a toothpick inserted into the center comes out clean.
  • Allow donuts to cool on a wire rack, and drizzle with glaze.

Mocha Glazed Mini Donuts

Serves: Makes 12 mini-donuts (4 servings)

Prep Time: 30 minutes

For Donuts:

  • Preheat oven to 325F
  • Mix protein powder, coconut flour, baking powder, and nutmeg until well combined.
  • Add egg whites and coconut oil, and mix well.
  • Spoon the batter into a ziplock bag, and cut off a corner.
  • Pipe batter into cooking spray coated donut pan.
  • Bake for 8 minutes, or until firm.
  • Let cool slightly, and remove donuts from pan.
  • Set the donuts in the freezer while you mix the glaze ingredients.

For Glaze:

  • Combine dry ingredients in a small bowl.
  • Add coffee one tablespoon at a time until the desired consistency is reached, stirring until smooth.
  • Dip the tops of donuts in the glaze or pour over tops.
