As the weather cools down, soups and stews become more popular. While they’re warm, comforting, and delicious, not all of them are as healthy as you’d think! Here’s a great recipe for a ham & black bean soup that’ll keep you on track & warm as the temperatures start to drop!
Serves: Makes 8 servings
Prep Time: 2 hours
Ingredients:
- 1 cup cubed ham
- 1/2 cup diced celery
- 2 cups water
- 2 (10 oz.) cans low-sodium chicken broth
- 1 (19 oz.) can black beans, washed
- 1 minced onion
- 1/2 tsp. minced garlic
- 1/2 tsp. cayenne
- 1/2 tsp. cumin
- 1/2 tsp. salt
Method:
Combine all ingredients in a large pot and bring to a boil. Reduce heat and allow soup to gently simmer for approximately 2 hours stirring occasionally. The simmer of a full 2 hours is best in order to bring out all of the flavors of this soup.
