Pizza is one of my favorite things to eat but I have been trying to stay clear of eating so much bread. So that got me thinking, there has to be other ways to make a pizza. I found this really great recipe off of BODYROCK.tv that I had to try!
It was so easy an in expensive to do which is always a plus in my book! All you need are a few simple ingredients which you can always substitute or add your own in for a nice twist.
What You’ll Need:
- 4 tomatoes
- 4 large Portobello mushrooms
- 4 cloves of garlic
- lemon
- 1 leek
- 1 onion
- fresh basil
- parmesan
- cheese
- fresh parsley
- olive oil
- salt
Directions:
Step 1: heat up around 2 tablespoons of olive oil in a large frying pan
Step 2: Chop up your onion as much or as little as you would like, place them in the pan and stir until they begin to caramelize
Step 3: chop up the tomato, garlic, and leek
Step 4: add your chopped up goodness to the pan adding a pinch of salt. Sautee until the tomatoes become soft
Step 5: squeeze around 1 table spoon of fresh lemon juice to your pan
Step 6: add 4 or 5 fresh chopped basil leaves
Step 7: spray a baking sheet with olive oil and place the mushrooms bottom side up
Step 8: Add the mixed ingredients from the sauce pan into each mushroom and top with grated parmesan cheese. Place the baking sheet into the preheated oven and bake for 12 minutes at 400F
Step 9: ENJOY!
To finish the night off with a sweet note (which I always do), I sliced up some strawberries, apple, and added some grapes to make one of my favorite end of the day deserts!
