Recipe: Chicken and White Bean Chili

Chicken and white bean chili

Serves: 4

Serving size: 2 cups

Cooking time: 40 minutes

 

Ingredients:

  • 1 Tbsp. olive oil
  • ½ medium diced onion
  • 2 cloves minced garlic
  • ½ tsp. dried oregano
  • ¼ tsp. dried ground coriander
  • ¼ tsp. dried ground cumin
  • 1-1½ cups low-sodium chicken or vegetable broth (low sodium if possible)
  • 1 can (28 oz.) diced tomatoes
  • ½ can (3.5 oz.) diced green chiles
  • 1¾ cups white beans (cooked)
  • 1¾ cups corn (cooked)
  • ½ lb. chicken (cooked and diced)
  • Salt and pepper to taste

Directions:

In a medium pot

  1. Over medium heat sauté onion and garlic in olive oil until onion is soft and translucent.
  2. Stir in broth, tomatoes, chiles, and spices. Bring to boil, then allow to simmer for 5 minutes.
  3. Add corn, chicken and beans. Allow to cook over low heat for approximately 10 minutes.

Remove from heat and serve.
